Tragbarer Herd / Portable hearth



Liebe Leser, in den letzten Wochen hatte ich viel zu Tun und kam daher nicht zum Einstellen von Beiträgen.
Unter anderem habe ich einen Tag lang die Station zu mittelalterlicher Küche auf der Eröffnungsveranstaltung des Labors für experimentelle Archäologie (LEA) in Mayen übernommen. In den Wochen zuvor habe ich dafür einen immer wieder aufgeschobenen Plan endlich umgesetzt und mir einen tragbaren Herd gebaut.
Dieser wurde von mir in Anlehnung an spätmittelalterliche Bildquellen und mit Anpassungen an meine Bedürfnisse erstellt. Dem FFM Bad Windsheim, besonders Herrn Dipl.-Ing. Back, möchte ich für die Überlassung des Ziegellehms und der Backsteine danken.

Dear readers, I did not post anything for a while because I had to much to do over the last weeks.
Among other things, I took charge over the medieval cooking station on the opening event of the Laboratory for Experimental Archaeology (LEA) in Mayen for one day. It took me some weeks to build one of my most dearest “pet projects”: a mobile hearth.
This has been constructed following late medieval altar pieces and has been modified to accommodate my needs. I want to thank the FFM Bad Windsheim, especially Dipl.-Ing. Back, for putting the clay and the bricks at my disposal.


Auf Tafelbildern des 15. Jahrhunderts treten gelegentlich mobile Herd- oder Glutkisten, meist im Zusammenhang mit der Geburt Mariens oder der Geburt Christi, auf. Die einfachsten Formen sind hierbei unverzierte oder mit einfachen geometrischen Mustern verzierte Kisten, auf denen ein Feuer und ein Topf oder Dreibeinkessel Platz findet. Manche dieser Kisten sind mit Metallringen ausgestattet und dadurch besser zu Tragen. Einige andere Beispiele besitzen vier Räder, so dass man sie an den Ort ziehen kann, an dem sie aufgestellt werden sollen. Auch runde bis vasenartig gestaltete Terrakottaherde, die nach demselben Prinzip arbeiten, sind manchmal zu sehen. In der Regel finden solche Konstruktionen auf den Bildwerken in Räumen - vom einfachen Stall mit löchrigen Wänden und kaputtem Dach bis hin zum gut ausgestatteten bürgerlichen Schlafgemach - Aufstellung. Das Feuer wird sowohl bei den Herdkisten als auch bei den Terrakottaherden direkt auf der Herdplatte entzündet.


In the panel paintings of the 15th century mobile hearth constructions or ember boxes can somtimes be seen. Mostly these are associated with the birth of Maria and the birth of Christ. The most simple kinds are undecorated or with simple geometrical patterns decorated boxes which have room for one pot or small cauldron and a fire. Some of these boxes have metal rings which are used for moving them. Some others have four wheels for pulling and pushing them where they are needed. There are also simple rounded or vase like terracotta hearths which work the same way. Mostly these constructions are depicted been used in rooms - from stables with holes in the walls and broken roofs to well furnished middle-class bedrooms. The fire used on hearth boxes and terracotta hearths is kept directly on top of the hearth.

Für die Veranstaltung und meine Kochversuche, habe ich die Konstruktion so abgewandelt, dass zum Einen um ein zentrales Feuer drei bis vier größere Töpfe passen. Das heißt ich fertigte zuerst einen Holzrahmen von ca. 60 auf 60 cm, mit Raum für die Herdplatte von ca. 53 auf 53 cm an. Der Kasten ist ca. 24 cm hoch, damit ich eine etwas angenehmere Arbeitshöhe habe. Zum leichteren Transport, wurden nach dem Vorbild mittelalterlicher Lastentragen und Schubkarren Tragegriffe ausgearbeitet. Der Holzboden sitzt etwas unterhalb der Mitte.

For the event and my cooking experiments I altered the construction that I can fit three to four pots around a central fire. That means the wooden frame is about 60 to 60 cm, leaving room for a plate of about 53 to 53 cm. The box is about 24 cm high for a more comfortable working position. For easy transport I left handles similar to those on medieval panniers and wheel barrows. The wooden bottom is put in a bit below the middle.

Darauf liegt ein zweischichtiger Aufbau aus Lehm und Backsteinen. Das FFM hatte noch mit Sägemehl gemagerte Ziegel auf Vorrat, von denen ich einige bekommen konnte. Durch den Holzanteil, der beim Brennen der Backsteine verbrennt, sind sie leichter als konventionelle Ziegel und zudem poröser und deshalb einfacher zu bearbeiten. Ursprünglich sollte zum Abschluss noch eine Schicht Lehm aufgetragen werden. Da ich allerdings nicht genug mitgenommen habe, stehen nun die Ränder des Rahmens einige Zentimeter über und die Backsteine bilden die Platte.


On top of the bottom is a two sheet structure of clay and bricks. The FFM had bricks made with sawdust. The sawdust burns during brick production and the material is much more light weight and easier to work. Originally a final layer of clay should build the top, but I did not bring enough material for that. So the rim is a few centimetres above the hearth plate.

Der Überstand hat sich jedoch beim ersten Einsatz im LEA als durchaus praktisch erwiesen. Dadurch dass den ganzen Tag der Wind fast ausschließlich nur aus einer Richtung über das Feuer strich, bestand die Gefahr, dass der Rahmen in Brand gerät. Durch gelegentliches Wässern und das innen an den Rahmen Anlehnen von Ziegelsteinen konnte diese Gefahr jedoch verhindert werden. Mit einem höheren Lehmaufbau wäre dies nicht so einfach möglich gewesen und einer der Griffe hätte eventuell Feuer fangen können.


The exceeding rim proved to be of advantage during the cooking at the LEA. Due to the wind blowing basically from one direction the whole day, there was danger that the frame could catch fire. With putting water on it sometimes and using bricks to block the flame reaching the wood, I could manage to keep it from burning. With an additional clay layer it would not have been possible to put the bricks in there the way they were supposed to be and one of the handles could have caught fire.

Alles in Allem war ich sehr zufrieden mit dem tragbaren Herd, auch wenn sich nach der Veranstaltung durch Temperaturwechsel und unterschiedliche Luftfeuchtigkeit eines der Bretter verzogen hat und sich dadurch Lücken gebildet haben. Zur Zeit suche ich deshalb nach handgeschmiedeten flachen Eckwinkeln um den Rahmen fester zusammenzufügen.


In the end I was very satisfied with the portable hearth even though one of the boards twisted due to temperature and humidity changes and there are now some gaps. At the moment I am searching for hand made flat corner irons to give the frame more stability.

  1. Thank you for posting that, it looks like a very useful addition to a site where building fire on the ground isn't possible.

    If you use riven or properly quarter-sawn wood to build the box it won't warp due to the heat.

  2. Thank you for the comment. The main problem was, I did not have much time to build the fire place and the wood I used was what I could get on short notice. I do not think the heat was the cause. As we packed the car in Mayen everything was as it should be. But after coming home we left part of the equipment in the car over night - including the hearth. Weather was colder in Mayen and humidity might have been different. Additionally the clay inside was not dry already because I finished the hearth just 2 days before we left for Mayen. Next morning as we unpacked, one board was twisted a bit.

    I think I put two boards in the wrong way. The outside of the annual rings face outward. If I had put them in facing inward, the wood might have twisted inward, too, and the gap might not be there.
